Sweet Potato Cornbread Muffins Recipe

Delicious but might be too heavy for some

Made exactly per the recipe, thees muffins are fabulous! Just love the flavors, and the recipe made a dozen and a half muffins and could've made more if I had been judicious about putting the right amount of batter in the tins. However, the consistency is sSimilar to a cake that has fallen... What we call in the south a "sad cake." I happen to love Sad cake, and my friends and I Gobbled them all up And enjoyed every bite . But I guarantee some folks are going to think they're too heavy, or they haven't been baked long enough, or they need more leavening.
