I've been eating gluten free for ten years and had given up homemade bread because, at the time, gluten free flour options were mostly "make your own" recipes. I purchased Nicole's blend and xanthan gum and WOW! I've made three loaves so far in my bread machine using Nicole's bread machine recipe. I LOVE IT! I forgot how wonderful it feels to bite into a fresh loaf of bread. I'm still getting the hang of using the bread machine and smoothing the top so it looks pretty, but the taste is amazing!
