Beaufort d’Alpage is an historic cheese whose origins date back to the 15th and 16th centuries when the Rhone-Alpes mountain woodlands were cleared to make pastures filled with wildflowers, herbs and a variety of grasses which the Abondance and Tarine cattle grazes freely on during the summer. The cheese is made in high altitude chalets.
