Good specialty decaf coffee is like a snow leopard. You’re sure it’s out there, but you expect you’ll never actually find it in the wild. Sure, some companies make promises about varying processes, certain kinds of roasting, or magic beans, but decaf always seems to taste like coffee that’s out of batteries. They print notes of cane sugar, pear, plum, etc. on the bag, but all you seem to taste are notes of “brown” or “slightly aromatic paper grocery bag.” Enter Isolation decaf. Having been hurt before, my expectations were low. Have to protect your heart, you know. But when I made a pour over, it tasted like… good coffee? It WAS good coffee. Really good coffee. Like, so good I was worried I was drinking regular coffee at 8pm. I’m not sure how they did it, but they found the snow leopard, tamed him, and taught him how to do algebra. 10/10 would recommend.
