Amazing quality
First time customer and I couldn’t be more pleased with the quality of the olives delivered. They were pretty big and just gorgeous. Not to mention, they came pretty quick and packaged so well. They are currently sitting in brine, but i expect them to taste amazing too

A+++ Olives: Delicious, Nutritious, Easy
My family loves these olives! This fall, I ordered 20lb Early Harvest, and it turns out Late Harvest was available so got 10lb. Packed perfectly sealed for great sanitation and arrived in perfect condition even though these Late Harvest olives are more tender. These olives are so good that my family can eat 5lb olives (1-gal jar) within 2 weeks! I crack some for faster curing (3 weeks), and leave others whole for longer/later eating (3 months). Just in salt water, no changing; but shake jar everyday until fermentation (bubbles) kicks in and put jars on trays in case of overflow. Fermentation gets rid of bitterness, great, and all nutrients kept.

A day in the life of an Olive
The olives came well packed. No bad spots. I sorted the very large olives from the medium size, then Soaked them in sodium hydroxide for 24 ish hours then rinsed for 3 days. Then I soaked them in salt solution for the next 3 days. They came out perfect this year, now to put them up in mason jars.
