It works so well as a kitchen knife, I bought two.

I bought one for my wife to use in the kitchen when she's dressing beef, chicken, pork, etc. She loved the flexibility of the blade, the sharpness of the blade and the edge retention from the N690 steel. It worked so well, I bought two. Each a different color handle, so she could identify which one is clean and which one is not by the color of the G10 scales.
