Heritage Hard Red Wheat Berries

New to Grinding

My son has mastered his sourdough skills. We started with Heritage Bread Blend which we absolutely loved. I decided with all the bread baking we should invest in our own flour mill and start grinding our own, especially to save money, and then finding a greater benefit in the immediate freshness of the flour. The wheat berries come in clean. Truly happy we have found a great product for our baking needs.

This grain just doesnt perform the way i expected. It’s got nice flabor, but both low extensibiltity and elasticity. Fresh milled or aged, it just isnt nice to work with for hearth breads. Over 50% and the dough became like clay. I will try bolting it next, but this is a very disappointing grain dor my bread.
