Excellent substitute for regular AP and bread flour in recipes. Recipes turn out beautifully and you can feed a starter just fine with it. Just note that by weight a cup of regular flour weighs less than a cup of this flour. In recipes (and I always measure by grams for baking) I start with the regular flour weight knowing I have plenty of wiggle room for adding more to get the same dough. I've used this for breads, pizza dough, and other baked goods with success, though I haven't yet tried it for cakes or pasta.
