Incredible indirect cooking. Very well made BBQ keeps temperature consistent for low and slow ribs, brisket, chicken etc. The lower burner tray works as advertised. Lots of clean smoke from chunks of hardwood. Way better than tin foil wood chunk / smoker box setups. Great for steaks on dircet heat too. But that isn’t what makes this BBQ special. Lots of BBQ can do direct heat well. Indirect is a different story. If you want to set it and forget it, you can do that with the burners. But if you are using large chunks of wood for smoke, you need to check the temperature from time to time. Burning chunks of wood will (obviously) have an impact the overall temperature. Need to play with burners a bit to accommodate these small changes.
