This is just one of the many cuts of pork we enjoy from Campo Grande, they are all so delicious!! My daughter officially refers to it as the 'yummy pork' (any of the Campo Grande pork we cook). We've been ordering from the for years and have never been disappointed.

I rubbed some salt and pepper on the steak after removing a bunch of fat and silver skin. I tenderized them too and let them sit and warm up no grilled them on high heat until each side had a nice sear and they firmed up. Sliced against the grain and soooo good!

Our first experience with Campa Grande Iberico was wonderful. Lots of flames while grilling produced a great, tasty Maillard Reaction making a wonderful treat.
