Tenderloin Roast- Filet

It did not come tied up as I requested and I expected it to be much more trimmed of fat and the plastic like sheathing on the meat. I spent well over an hour trimming and tying it up properly. I am disappointed. Once properly prepared it was however delicious.

I was impressed before I even cooked it. What a beautiful piece of meat! The cut, trim and color were perfect. I did a very slow roast with only salt, pepper and coconut aminos, then finished, each piece off individually to desired taste and temp in a cast iron pan. The freshness was easily and thankfully recognizable by everyone.
