Ibérico St. Louis Ribs

The flavor is the best I ever had. Used a dry rub and smoked them. Gave a cooked rack to a friend and they loved them. They did some Costco ribs at home with the same rub and said the Costco ribs didn’t have much flavor. Sent them home with an uncooked rack to cook up, and they couldn’t believe the difference!

Not enough Meat

I was a bit disappointed overall. Flavor was good but I was expecting it to be the best ribs I had ever had.... they were not... Not meaty enough and more fat than I want in a rib portion.
