Hacienda Azul, Costa Rica 70% 2022 Harvest Single-Origin Chocolate Bar

Hold on to your taste buds. This one is for all of the astringent lovers. At first smell it has a deeply woody scent and as it melts the volatie compands will increasingly grow. This chocolate bar has a serious bite, aspect of the melt made me feel like I was inhaling rubbing alcohol and felt the fermentation burn my nose and throat. It made my tongue feel extremely dry and left that burning feeling for 30 minutes after each time I tried it. This isnt for me, if you like the strong, stingy alcohol fermentation this one is for you. Out of the 7 chocolate bars, I tried from dandelion. This is the only one that gave my tastebuds and throat rhis extreme reaction. The subtle hints of pistachio built up quickly and turned into burning and astringency. Ive this bar on 3 different occasions and it never got any less astringent. Was so desperately hoping for something creamier and warm.
