Ibérico Short Rib 'Abanico'

This is my favorite! It is so delicious. It eats like steak. I'm so glad I took the leap and ordered the starter pack. It came frozen and well packed.

This was the first item I tried, and i followed the instructions in the book and it came out perfect! The flavor was incredible! Took a bit longer than I expected to reach proper temp but that may have been my fault. So far, I have not been disappointed.
