Amazing flavor and perfect for Tapas
Flavor is amazing. Have cooked two of these so far with a little kosher salt in a carbon steel skillet. As with most richer, wagu-like cuts a little fills you up due to the high fat content which in my opinion makes it perfect for tapas style snacking

The secreto steak I received was of extremely variable thickness, and cooking it was a problem.
The secreto steak I received was of extremely variable thickness. On one side it was about 1/4 inch thick, while the other side was a little over 1 inch thick. So I decided to cut the steak in half to separate the thinner side from the thicker one. I sliced up the thinner side against the grain and used it in a Chinese stir-fry. That worked out OK, but the flavor of the pork was mostly masked by the sauce I used in the stir-fry. For the thicker half, I simply salt and peppered it, and then cooked it in a very hot cast iron skillet. But even that piece (around 1/2 lb.) varied in thickness from about 1/2 in. to over 1 inch. Because of that, one side got completely overcooked, while the other side was raw in the middle. The flavor and tenderness were great, but the uneven cooking was a real problem. Consequently, I don’t think that I will buy this cut again. I have yet to try the other cuts that I bought.

Great product, excellent quality and flavor for me the best way to enjoy it is grilled and seasoned just with salt ( i like Pink salt ) and fresh black pepper. (Please leave the fat on it for better flavor)
