A bit too roasty for me

First I’ll say, I mostly drink light roasts. This is the most developed coffee I’ve had in years, so it’s not really my preference. I found it to be quite roasty and there was a bitterness in there that I could not remove, even when using a super low extraction recipe (1:15, 87°C). It was most enjoyable when cooling down; the toffee/brown candy sweetness presented more clearly and the bitterness subsided a bit. I much, MUCH prefer P&S Sugar Heist to this one.

The toffee followed by almond were the flavours we tasted the most in our pour over. It was a great roast.
