Nice knives

I tried a Wustoff classic chef knife at a knife skills class. I liked it a lot, but it is a bit heavy. I ordered a different brand knife that I also liked in the class. However, there are some things that I do need a heavier knife. So, I finally saved up enough to order a Wustoff. The pairing knife was a whim. I hadn't tried one of those. It's a nice knife too. I do use my chef knives for most things after that class. I did struggle with the cost of the Wustoff knives. That's why I had to save up. I am wondering what degree the sharpening needs to be to keep this knife like it is new.

Great ergonomics, great weight. A fantastic set that covers just about everything.

Knives that are a joy to use.

I've spent so many years working with terrible knives. I regret doing so. I realize now that it would have been wiser to spend the money up front to purchase quality knives.
