The beluga lentil is the star of the lentil world. Those little guys hold their shape and have a lovely mouth feel. Their thin skins stay intact so they aren't prone to becoming mushy. They have a wonderful flavor. Very versatile. Palouse beluga lentils are superior to others. They're dried but they taste fresh-dried...not like store bought (if you can even find them) The freshness makes all the difference in their dried goods.
