I first discovered this balsamic at the Ritz Carlton Half Moon Bay in California. Their restaurant used to serve it. I moved away several years ago, and started purchasing their oils and balsamic as soon as it was available again.

I have purchased a fig balsamic for 20+ years from one company. This company close down several years back. This company has created an an identical fig balsamic vinegar. Nothing compares. 10/10, I highly recommend. My main recipe… Avocado, tomatoes, fresh basil, mozzarella cheese, olive oil. Add this fig balsamic vinegar w/ Kosher salt… best thing you’ll ever try.
