Cowboy is a one of kind jerky!
Cowboy is the kind of jerky you need to learn how to eat and it is simple. It is usually about 1/2" thick. Tear into the grain of the meat on an edge and shred it. Then only need a marble size piece to suck on before chewing it to get the flavor before eating it. It is absolutely my favorite jerky. Sometimes when I get a pound or more, I will dice it up in 1/2" or so cubes and freeze it. Then just take out of freezer and pop in a couple chunks like jerky nuggets! Their great! I have been going to Mahogany Meats since summer of '84. First place I stop every summer before heading up to June Loop or Lee Vining for my vacation.

Cowboy jerky
Great chunk jerky. Bite off a piece and you can suck the juice for a long time

Good chew and tastes similar to a smoked ham hock.
