Hawaiian Chocolate Covered Coconut Truffles

I’m not even exaggerating when I say that when I got into the coconut filling in the center of this truffle, that I experienced imagery of myself at the beach in summer. The 70% dark chocolate is really the sweet spot for flavor/sweetness in the chocolate and the coconut center is absolutely delicious.
