We love taking these on our hikes as they don’t melt or get messy in the warm weather like some chocolate options do. And they’re really delicious. I initially was a bit skeptical of the combination (lemon and cashews) but it’s unexpectedly satisfying.

All time favorite

These lemon bars are my all-time favorite. I take these to chemo, I eat them every morning and then eat a Greek yogurt to maintain my protein intake while on chemotherapy. These are the absolute best. When my taste buds changed, I could still eat these and not get sick.
