Chef's Pan - Hestan is King!
I've bought 3 items from Hestan (sauce pan, small butter heater, and Chef's pan) and using them has been a pleasure. Let's start with look and feel, they are all very pleasing with a subtle/dark glow. They handle superbly on the grill, with movement feeling very intuitive and flowing smoothly. Cooking is superb, heat transmission seems so even and I enjoy using the sides of the pan to brown vegetable parts. I cook a lot of Indian food, often involving saute-ing of onions with spices - many times with other brands these stick to the bottom (of steel pans). Here the bottom stays much cleaner! Overall I'm very pleased with the Hestan items I bought - wish I'd come across the brand eariler. My one small issue is that with the butter-warmer, the handle sometimes feels a little hot. I realize this could be a size thing, esp if placed on a larger burner. Any tips/thoughts there welcome.

I’ve had a LOT of pots and pans in my life, but this might be the most enjoyable one to cook on. It holds heat so well and is so intuitive to cook on. I’m also so impressed by the fact that the food doesn’t get stuck, like eggs especially, and yet it also does have the ability to get that wonderful Maillard reaction going for the perfect searing of meat and to ensure you can later deglaze the pan and get those delicious sucs that chefs value so much. (You can’t do that with a ptfe skillet!) It makes for much better sauces to go with your dishes. Another great thing is the quality of the pans, they are so well made! The weight is just right too, heavy but not so much that they would be uncomfortable to wash. I’ve been cooking on French cast iron for a while and it’s been a joy to switch to this chef pan and be able to wash it so much more easily (bits of food come right off too!) without my wrists protesting the weight of the cast iron. And this might be subjective but I feel the flavor of the food was better cooked on this chef’s pan. The omelet I made on my little nanobond skillet is also delicious. So easy to use and delicious results!

Love it.
Crazy price but a versatile piece of cookware that will be used I believe nearly daily. It is a rather large so we do store it on the cooktop which add to its being use regularly. Cleans beautifully and takes high heat.
