Rest before using with Espresso

This coffee is very nice. The reason for 4 versus 5 stars is relateis there is no roast date on the 5 lb bag so it's difficult to determine how long to let it rest. There was plenty of CO2 so it was fresh. I suggest letting it rest at least a week before using with espresso. It was quite gassy at first but settles after resting
