Lamb Shoulder Joint

Your lamb shoulder was the star of our Diwali feast! It looked so beautiful, my wife almost switched plans to cook an Indian spiced roast instead. But she stuck to the original plan and after I helped with trimming and breaking the joint down it was then set to a low temperature and cooking away. It was the correct decision , it was melt-in-your-mouth delicious. Thanks for helping to make our celebration special.
