The 13-14 lb Turkey was brined for 48 hrs in a large bag and surrounded in ice. Dried off the skin before rubbing olive oil and cajun seasoning in the cavity under the skin and all over the skin. Placed a thermometer in the breast and smoked for 9 hours. The family loved it.

First timer and will do so again.
