Dominican Coffee, Red Honey Process

Better coffee 15 days after roasting. The coffee was only five days old when I got it and it was a little rough around the edges. Pretty harsh in my opinion, the flavor notes were either not existent, or over the top. After 15 days old, it was a much smoother, better tasting coffee.
