Gift for my daughter’s family. Son in law prepared brisket on his Green Egg and it was superb. I was surprised that he had to do as much fat trimming as he did. There was at least a pound of solid fat in one block on the outside of the brisket. He didn’t think that unusual but I don’t understand the process of meat cutting bought from a butcher. It isn’t like that at the grocery.
