I made ham and bean soup with these beans and it was INCREDIBLE.
Seriously. The beans were creamy and absorbed the aromatic qualities of the broth and were delicious.

I love these beans, a big step up from a white bean, which I don't bother to cook since finding these. The Yellow Eye Bean, to me, is creamy and delicious.
