The spelt is good
I enjoy this spelt flour as it is whole grain, but finely ground. It rises well and in my experience, handles up to 75% spelt flour in a mix, 25% bread flour. The rise without the white flour is a challenge that some bakers may handle better than I am able. I have baked this in an electric oven and in a wood fired oven and it did well in both. Using about a 76-78% hydration.
