Appetizing carpaccio
This is the second time we have used a pearl for carpaccio. We have a slicer and the thin slices with your recipe for the dressing are really good. On separate occasions we have added micro greens and baby arugula. The tanginess off the arugula and the sweetness of the ostrich complement each other, deliciously.

The Best You Can Get
A couple of years ago I was told that my heart had a few plugged and nearly plugged veins and they would have to put 2 stents in my heart. I would spend the next year preparing for this event. I went from 245 lbs. down to 200 just by cutting out most of the cholesterol that I ate. Ostrich meat and fish were number one on the list for daily consumption. I missed the ostrich while you were down and rebuilding but it will create a bigger and better place to order from now. Then you added Lamb !!!!! I couldn't order that fast enough!!! I don't have it yet but it is ordered !! I had a pearl last night for dinner...well, half of one. Boy, did I miss that flavor and the way my body responds to Ostrich meat. Absolutely love it !!! Pare it with the "Classic Burger Seasoning" and you are in a whole nuther world!!!
