Since discovering Leatherwood honey whilst travelling in Tasmania and seeing where the honey is farmed, in the ancient rainforests of the huon pine, I have been hooked. The leatherwood flower has a strong unique scent and this is reflected in its taste of the honey. Bold and beautiful. My favourite of all the many honey varieties I have tasted living in this beautiful country, Australia.
