Not my cup of coffee

This coffee has an ashy aftertaste and astringency that I have not been able to curve even reducing extraction by grinding coarser or lowering water temperature. The beans already smell ashy, although the coffee smells really good when just ground. I use a V60 with a hand grinder (a mid tier one) which worked great with other coffees.

Solid Coffee, just didnt quite hit my preferred taste profile
