Disappointed that the mole recipe is not in this edition, so I took off 1 star. My mother and I visited Santa Fe recently and discovered this Cafe quite by accident. It looked charming and the menu was intriguing. While we waited for a table, we saw the 2 James Beard awards and knew we were in for a treat. As someone who grew up in San Antonio, Texas and has all different varieties and types of mole, the mole served at Cafe Pasqual was the best mole I have ever tasted in my 57 years of life. Everything we ate was absolutely delicious and perfection. I look forward to cooking my way through this cookbook.
