A smaller version of our Fujisan Black fillet steaks, reared and butchered in Kawaguchiko.
Taken from the chateaubriand of the fillet, these steaks are roughly 3cm thick. When cooked properly (rare to medium rare), these are every bit as good as you can get in the very best steakhouses.
