I used to charbroil my steaks but when I have the time. Thaw out your steak in refrigerator overnight. Season with salt and black pepper. Preheat oven to 120F and warm steak on grate for 30 minutes Heat up a cast iron skillet to high (where butter just starts to smoke. put 3 tablespoons real butter and immediately put steak in pan. Do not touch it . Cook 3 minutes, flip for 3 more minutes. Remove from heat for three minutes Serve
