Soft, not sharp or goaty, elegant and slow to dissolve, not dry, not moist but firm-ish and subtle - the flavour back-builds for over a minute then appears as a nutty, dry non sugared cheesecake flavour with live emzime packed creamy wine begging mouth feel for a Cannonau from Sardinia which is a match made in heaven!
